INGREDIENTS
- Sliced white bread
- Fresh strawberries
- Heavy Whipping Cream (also called double cream)
- 2 tablespoons Sugar (adjust to taste)
- A few drops of vanilla extract
INSTRUCTIONS
- Prepare the Strawberries: Wash and dry your strawberries. Slice about a third of them lengthwise into thin pieces. Leave the rest whole or halve them, depending on the result you want.
- Whip the Cream: In a bowl, combine the heavy whipping cream, sugar, and vanilla extract. Whip on medium speed until stiff peaks form. The cream should hold its shape when lifted.
- Assemble the Base: Lay out your bread slices. Use a spoon or spatula to spread a generous layer of whipped cream on one side of each slice.
- Place the Fruit: Place your strawberries on four of the cream-coated bread slices. Arrange them close together, ensuring the whole or larger halves are centered to create a beautiful pattern when the sandwich is cut.
- Close and Chill: Top the fruit slices with the remaining cream-coated bread slices, cream-side down. Gently press the sandwich together. Wrap each sandwich tightly in cling film (plastic wrap). Chill in the refrigerator for 30 minutes. This is essential for the cream to set and the sandwich to hold its shape for a clean cut.
- Cut and Serve: Unwrap the chilled sandwiches. Slice the sandwich diagonally or straight across, revealing the beautiful fruit pattern. Sprinkle powdered sugar on the sandwich before serving.

PRO-TIPS
- The Crunchy Crust: If you prefer a firmer texture, lightly toast the bread before spreading the whipped cream on it. Ensure the bread is completely cool before adding the cream.
- Use Different Fruits: This recipe works wonderfully with kiwi slices, raspberries, orange segments, mango, or even a mix of berries. Always pat fruit dry before using it.
- A Touch of Sweetness: For a professional finish and a little extra sweetness, sprinkle powdered sugar on the sandwich just before serving.
- Cream Cheese Base: If you are a cream cheese fan, then you can use cream cheese for a richer filling. Mix 2 tablespoons of soft cream cheese (like Philadelphia) into the whipped cream before assembling.
